How much curve would you expect there to be in the video?

Before you can answer that you need more information, like what's the distance and at what height was the video taken, with those bits of data you could calculate the expected curvature. But the video doesn't show how high up the camera was, why obscure the details required to make a judgement.
 
Here is the view from St Catharine's around 29 miles in total - which is only slightly further than Dover to Calais.
You wouldn't expect to see any curvature at all.
Interesting that you can't see the building bases though.
St Catharine's elevation is roughly 98m and a 29 miles curvature drop would cause an obscured object measurement of 10m.
Which would partially obscure building bases in Toronto.
 
If space and everything we've been told is 'real' then why do NASA spend so much time making spoof videos, hair-spraying women's hair up, having their masonic astronauts spinning on wires? Lets not get pedantic. I'm saying space is not what we've been told, it's not a big empty space with rocks flying through it. It's liquid/water or whatever and we are on a flat earth covered by some sort of dome.
 
So what is your man Elon up to, with his Bowie car, and returnable rockets, and satellite constellations?

I don't have the answers, but i think we are on a flat earth covered by a firmament. I'm not trying to convince you, I'm just saying that's where i reckon we are.
 
I've never actually witnessed in person, the curvature of the Earth but if I had suspicions that it was not round - I'd remain puzzled about the sunset and sunrise thing. Not that these phases of the sun occur, but how they are uniform across the planet. The sun would have to be like a carriage return on a typewriter. Also the round shadow that the Earth projects during a lunar eclipse.

Of course if we're all plugged in...
